- This qualification is tailored to those working in the retail butchery environment and butcher shops. General tasks involve greeting customers, taking orders, handling payments, serving food at the counter, preparing displays as well as the more core butchery units which will demonstrate your competence in preparing a wide range of meats for display ion a retail butchery outlet.
- This qualification is tailored to those who work in meat processing plants and slaughter houses. The general tasks involved here are preparing meat for dispatch and processing for others. It can include all stages of the process from receipts of the live animal and lairage to the processing and cutting, trimming, boning and portioning of the primal carcase.
- This qualification is tailored to those working food processing and manufacturing outlets and covers a wide range of environments from bakeries ready meal production in small or large operations. General duties include the production of food products to meet customer specifications – this will involve hands on preparation of the product, maintaining food hygiene and health and safety regulations as well as cleaning, packaging and dispatch of the finished product.
